If you have been following my recipes you may have noticed that I choose to use coconut oil in place of other vegetable oils.

Coconut oil is great for several reasons:

It can be cooked at a high temperature as it doesn't oxidise and create free radicals like other oils.
 * It can be applied directly to hair and skin to provide moisture.
* It helps to absorb calcium and magnesium, which are both important for maintaining proper bone and teeth health.
* It can also have health benefits for pets including relieving arthritis and improving skin and coat condition.
 
A number of people I have spoken with have expressed a dislike for the coconut flavour. Whilst I personally enjoy the nutty flavour it gives to food, the Virgin/Expeller Pressed Coconut Oil (shown above) does not have any flavour at all so is a great option if the coconut flavour is not for you!

It should also be noted that unless the temperature is quite warm, coconut oil will stay in its hardened form. For use on meals served cold such as salads, Extra Virgin Olive Oil is a great option. As with any oil, use in moderation :)
